Coffee Ceremony by Tōsei, Desserts by Yujung KimJoin Tōsei for a unique coffee ceremony centered around the Dragon Scale Coffee Set, a handcrafted ceramic brewing system designed and made by the artist.
The ceremony was developed by Tōsei based on Zen philosophy, creating a contemporary ritual where coffee becomes a practice of presence.
Two exceptional seasonal coffees from La Cabra will be brewed and served. Guests will taste the iconic Cerro Azul Geisha from Café Granja La Esperanza, celebrated for its elegant white-floral aromas and vibrant citrus notes, alongside Potosí Natural, also from the same producer, which offers layers of ripe fruit and cacao shaped by the farm’s signature fermentation process.
The ceremony is accompanied by two dessert courses by Korean pastry chef Yujung Kim, thoughtfully created to complement each coffee and complete the tasting experience.
Yujung has refined her craft at the highest levels, including three Michelin-starred Geranium and Noma in Copenhagen, and Atelier Pond, one of Korea’s most revered fine pastry destinations.
The dessert menu:
Seasonal fruits with complementary elements, inspired by the Korean tradition of serving fresh fruit as dessert.
Misugaru: soybean mousse, gooseberry compote, grape and white wine jelly.
Corn silk meringue, goji berry juice, and spiced cherry compote.
All events will take place at the Tōseibo Ceramic Studio.
